Commercial freezers are opened constantly and run in kitchens that are warm and humid, which loads the evaporator with ice and puts gasket condition front and centre. Defrost cycles and drain lines need to work properly here or the unit ices up faster than it can recover, and holding temperature is a compliance matter.
Drain line heaters and trap arrangements matter far more in commercial freezers than in domestic ones, because a frozen drain backs melt water into the cabinet and re-freezes it. A unit that ices up repeatedly after service usually has a drain problem rather than a defrost one.
