What’s different in a commercial kitchen
In commercial use a downdraft system is working against grease and volume in a duct path that was already the harder of the two designs. Lift mechanisms and dampers see far more cycles, and access for cleaning matters more, because a duct run that cannot be cleaned properly will eventually restrict no matter how good the fan is.
In commercial installations the duct path is usually longer and has more turns than the design assumed, so cleaning access is the constraint that decides whether the system keeps working. Where access is inadequate we will say so rather than schedule a cleaning that cannot reach the restriction.
