Restaurant Kitchen Equipment Repair
In a restaurant kitchen almost nothing has a backup. One reach-in drifting out of temperature can put a whole night's prep at risk, and the clock that matters is service, not business hours.
The equipment also fails in a pattern that home appliances never show. A line runs through heat, grease and constant humidity for twelve to sixteen hours, and the parts that give way first are the ones exposed to all three at once — door gaskets, control boards behind a hot line, and fan motors clogged with grease film.

The equipment that generates most restaurant calls
Reach-ins, under-counters and prep tables
Refrigeration that holds product is the first call every time, because it is the one with a food-safety clock attached. A unit drifting slowly upward is a different job from one that has stopped — say which when you book, and give us the current reading if you have it.
Ice machines
Ice fails in summer, which is exactly when a bar or dining room cannot absorb it. On local water the usual cause is scale rather than a failed module, and production drops gradually rather than stopping — which is why it often gets noticed on the worst possible day.
Warewashing
A commercial dishwasher runs a cycle in a couple of minutes and does it hundreds of times a shift. Drain blockages, wash-arm obstruction and door seal wear dominate; the symptom is usually poor results rather than a machine that stops.
Cooking line
Ranges, cooktops and ovens on a commercial line take mechanical abuse that a home unit never sees. Ignition faults from spilled product and burner ports clogged with carbon are far more common than control failures.
Ventilation and hoods
Grease build-up restricts airflow long before anything fails outright. A hood that no longer clears smoke is usually telling you about the duct run and the blower wheel rather than the motor.

Temperature is the one fault with a deadline
Cold holding has a regulatory threshold and a health inspector does not care why the unit drifted. If refrigeration is the problem, that goes at the front of the call — not because the repair differs, but because the scheduling does.
Tell us your service window, not just your hours
A kitchen that serves lunch and dinner has a gap in between that is far more useful to us than "we open at eleven." A repair scheduled into that gap finishes faster than one that has to stop when service starts.
Grease is a diagnostic clue, not just a mess
Where the film has built up tells us where airflow has been restricted and for how long. It is worth mentioning when a hood, a fan or a condenser was last cleaned — it frequently changes the diagnosis from a failed part to a restricted one.

My walk-in is drifting warm but still running. How urgent is that?
Urgent, and more so than a unit that has stopped, because product is still in it and the temperature is climbing slowly enough that nobody notices immediately. Give us the current reading when you call.
Why does my ice machine make less ice every summer?
Usually scale, not a failed part. An ice machine cycles water constantly, so Chicago-area hardness builds up faster than in any other appliance, and production falls off gradually rather than stopping.
